OFFIDA PECORINO DOCG

A DOCG white wine obtained exclusively from the Piceno’s foremost white grape variety, opening with floral hints and tropical exuberance, with notes of pineapple and mango, closed by a subtle smoky touch. In the cellar, cold maceration immediately after harvest preserves structure and aromatic complexity. The lees resuspended several times during ageing complete its profile: a round, layered wine that never stops telling its story.

Grape variety: Pecorino 100%.
Production area: Ripatransone (AP).
Production method: organic.
Soil: medium-textured, predominantly clay with north-facing exposure.
Vine training: vertical trellis system with double Guyot training, low bud load, branched pruning technique.
Vine density: 3,000 per hectare.
Yield per hectare: 90 q.li
Wine yield: 70%
Harvest period: first half of September.
Harvest method: manual with in-field bunch selection, handling in crates, pre-refrigeration of whole bunches for 24 hours before processing.
Alcoholic fermentation: in concrete at 14–15°C for approximately 25 days.
Ageing: refinement in concrete with weekly lees resuspension.
